About Us
Shadybrook Garlic began in 2020, when we, Ethan and Wendy, moved to a farm in North Plains, Oregon with our 8 month old, Leah. We planted our first field of elephant garlic that fall in our front yard. Fueled by pizza and beverages, our friends and family members have helped us along the way. Summer 2021, we added twin babies to the team, Tori and Saige! Along with our friend and partner, Tim, we focused on refining our methods and cultivating a 1/8 acre plot. 2022 brought exciting times as we expanded to 1 full acre. We doubled in size for the 2023 season, growing two acres. We are motivated by our children to keep our fields free of harsh chemicals and use the most sustainable methods possible.

What is Elephant Garlic?
Well, elephant garlic is not garlic at all! This giant garlic is actually more closely related to a leek. Its unique genealogy lends a mild garlic flavor that elevates any dish. Elephant garlic bulbs grow to magnificent sizes, with individual cloves being about the size of a traditional garlic bulb. While the star of the show is the elephant garlic bulb, the entire plant is edible! The scape, a long and thin stalk that leads to the flowering part of the plant, can pan fried like asparagus or chopped up in salad or pasta. Leaves can be mixed into a fresh salad or cooked into an omelet. In Oregon, elephant garlic thrives on the wet winters and sunny spring time weather. Elephant garlic loves the PNW, and we love it right back!
